Torta od Maslina is a traditional Dalmatian olive oil cake, known for its moist texture and fragrant blend of citrus zest, almonds, and the rich flavor of extra virgin olive oil.
Ingredients:
- 1 cup extra virgin olive oil (preferably a mild, fruity variety)
- 1 1/2 cups sugar
- 3 large eggs
- 1 1/2 cups all-purpose flour
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 teaspoon ground cinnamon (optional)
- Zest of 1 lemon
- 1/2 cup almond flour or ground almonds
- 1/2 cup orange juice (freshly squeezed)
- 1 teaspoon vanilla extract
- Powdered sugar (for dusting)
- Almonds or slivered almonds (optional, for garnish)
Instructions:
- Preheat the oven to 180°C (350°F). Grease a round cake pan (around 23 cm or 9 inches) with olive oil or line with parchment paper.
- Mix Dry Ingredients:
- In a medium bowl, whisk together the flour, baking powder, baking soda, salt, and cinnamon (if using). Set aside.
- Combine Wet Ingredients:
- In a large mixing bowl, whisk together the olive oil and sugar until smooth. Add the eggs, one at a time, mixing well after each addition.
- Add Flavorings:
- Stir in the lemon zest, vanilla extract, and almond flour (or ground almonds). Add the orange juice and mix until everything is well combined.
- Combine Wet and Dry Ingredients:
- Gradually add the dry ingredients to the wet mixture, stirring gently until smooth and fully incorporated.
- Bake the Cake:
- Pour the batter into the prepared cake pan. Smooth the top with a spatula. Bake in the preheated oven for about 30-40 minutes, or until a toothpick inserted into the center of the cake comes out clean.
- Cool and Serve:
- Let the cake cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely. Once cooled, dust the top with powdered sugar and garnish with slivered almonds if desired.
- Enjoy:
- Serve slices of this moist, fragrant cake with a cup of coffee or as a delicious dessert at any occasion.
