Fritule Salad Recipe

A delightful combination of crispy, sweet fritule and a vibrant, savoury salad—perfect for a unique starter or festive dish.


Step 1: Make the Fritule

Ingredients for Fritule:

  • 500g plain flour
  • 1 sachet (7g) instant yeast
  • 200ml warm milk
  • 2 eggs
  • 3 tbsp sugar
  • 1 pinch of salt
  • 2 tbsp rakija (or rum, for flavour)
  • Zest of 1 lemon or orange
  • 50g raisins (optional)
  • Vegetable oil for frying
  • Icing sugar for dusting

Instructions for Fritule:

  1. Activate the yeast: Mix the warm milk with 1 tbsp of sugar and yeast in a small bowl. Let it sit for 10 minutes until frothy.
  2. Prepare the dough: In a large bowl, combine the flour, sugar, salt, and citrus zest. Add the eggs, rakija (or rum), and the yeast mixture. Mix until you get a sticky dough. Fold in the raisins if desired.
  3. Rest the dough: Cover the bowl with a cloth and let it rise in a warm place for about 1 hour, or until doubled in size.
  4. Fry the fritule: Heat the oil in a deep pan to 180°C (350°F). Use a teaspoon to scoop small portions of dough and drop them into the hot oil. Fry until golden brown, turning occasionally.
  5. Drain and dust: Remove the fritule and place them on kitchen paper to drain. Lightly dust them with icing sugar.

Step 2: Prepare the Salad

Salad Ingredients:

  • 200g mixed leaves (arugula, spinach, and radicchio work well)
  • 1 red apple, thinly sliced
  • 50g dried cranberries or pomegranate seeds
  • 50g walnuts, toasted and chopped
  • 100g feta cheese, crumbled
  • Honey mustard vinaigrette (see below)
  • Warm fritule (from above recipe)

Dressing Ingredients:

  • 2 tbsp olive oil
  • 1 tbsp honey
  • 1 tsp Dijon mustard
  • 1 tbsp apple cider vinegar
  • Salt and pepper to taste

Step 3: Assemble the Fritule Salad

  1. Prepare the base: Arrange the mixed leaves evenly on a serving platter or in a large salad bowl.
  2. Layer the toppings: Scatter the apple slices, cranberries or pomegranate seeds, toasted walnuts, and crumbled feta over the leaves.
  3. Add the fritule: Distribute the warm fritule across the salad for a fun, crispy addition.
  4. Drizzle the dressing: Whisk together the olive oil, honey, Dijon mustard, apple cider vinegar, salt, and pepper until emulsified, then drizzle generously over the salad.

Step 4: Serve and Enjoy

The fritule provide a warm, sweet crunch, beautifully balanced by the tart fruit, creamy feta, and tangy vinaigrette. Serve immediately for the best contrast of textures and flavours
