Dalmatian Fritule Desert

Dalmatian fritule are a popular Croatian dessert, particularly enjoyed during the holiday season. They are small, round, fried dough balls that are typically flavoured with ingredients such as lemon zest, raisins, and sometimes grappa or rum. These sweet treats are dusted with powdered sugar and often served warm.Here’s a basic recipe for Dalmatian fritule:

Ingredients:

  • 250g all-purpose flour
  • 2 eggs
  • 100ml milk
  • 50g sugar
  • 1 packet of vanilla sugar
  • 1 tsp baking powder
  • Zest of 1 lemon
  • 50g raisins (optional)
  • 1 tbsp rum or grappa (optional)
  • A pinch of salt
  • Vegetable oil for frying
  • Powdered sugar for dusting

Instructions:

  1. Mix the dry ingredients: In a large bowl, combine the flour, sugar, vanilla sugar, baking powder, salt, and lemon zest.
  2. Add the wet ingredients: Beat the eggs in a separate bowl, then mix with the milk and rum or grappa (if using).
  3. Combine the dough: Slowly add the wet mixture to the dry ingredients, stirring until you get a smooth, thick batter. If it’s too thick, add a little more milk. Stir in the raisins if you’re using them.
  4. Heat the oil: Pour enough oil into a deep pan or pot to cover the fritule balls when frying. Heat it to around 170°C (340°F).
  5. Fry the fritule: Using a spoon, drop small portions of the batter into the hot oil. Fry them in batches, turning occasionally, until they are golden brown and puffed up, which should take about 3-4 minutes per batch.
  6. Drain and dust: Once fried, remove the fritule from the oil and drain them on paper towels. Dust generously with powdered sugar before serving.

Dalmatian fritule are best enjoyed warm, often as part of a festive gathering or with a nice cup of coffee or wine.
