Overall flavour comes from a combination of olive variety (Oblica, Leccino, Cipressino, Casaliva, Bjelica, Pendolino or Ascolana Tenure) and polyphenol levels. Storage under argon before bottling preserves the oil's flavour, qualities and nutrients. Solid, dark glass bottles ensures quality is maintained when it reaches the consumer. Bottled oils should be stored away from light and heat.

Our super potent polyphenol oils have a more astringent and peppery taste. Those who don't enjoy such strong flavours may prefer one of our slightly lower polyphenol oils. Still excellent tasting but less peppery and more almond-like.
